  • 南洋群岛的气候与土地最适合咖啡生长。所谓的南洋咖啡据说是由南美洲传播到南洋群岛种植。
  • 南洋咖啡通常采用罗布斯塔(Robusta)咖啡豆。南洋咖啡的咖啡豆在处理方式上与常见的咖啡烘焙大不同。一般咖啡豆通常是以滚筒式的烘焙机烘熟,但南洋咖啡豆则是以大锅拌炒,同时会加入牛油、糖等材料一起拌炒。炒好的南洋咖啡豆会结成一大块,敲碎了之后才能磨成粉。传统上,研磨后的咖啡粉会与滚烫的热水搅拌,然后通过类似袜子的滤网倒入水壶。
  • 在新加坡,咖啡商一般将南洋咖啡称为“糖枳”(在福建话中指加糖的咖啡豆),而普通的咖啡则称为“干枳”(在福建话中指干咖啡籽)。
ETYMOLOGY
  • The climate and soil of Nanyang (literally, “Southern Seas”) is suitable for growing coffee. The cultivation of Nanyang coffee is said to have spread here from South America.
  • Nanyang coffee usually includes Robusta coffee beans. While most methods of coffee processing involve roasting the coffee beans in a drum-shaped roaster, Nanyang coffee beans are instead stir-fried in a large wok, with the addition of butter and sugar. The caramelised beans form a large chunk, which is then broken into pieces and ground into powder. Traditionally, the coffee powder is mixed with boiling water and strained through a sock-like filter.
  • In Singapore, coffee merchants generally refer to Nanyang coffee as “糖枳” (which means “coffee beans with sugar added” in Hokkien), while the usual coffee is referred to as “干枳” (“dry coffee beans”).
