由来
  • "米暹"中的"暹"是指暹罗,即泰国的旧名。
  • 这道美食据说来自泰国,因为它酸、辣、甜的味道是泰国美食的特色之一。
  • 另一说法是,米暹是一种马来或娘惹美食,发源地是马来西亚槟城,而当地的美食可能受到泰国美食的影响。
  • 米暹是新加坡人热爱的美食,比较普遍的版本是以辣椒油拌炒的米粉,加上切片的熟鸡蛋、豆干及韭菜,再淋上主要以酸豆(在新马一带普遍称为"亚参"[asam])熬煮而成的酸甜汤头。
  • 此外,据说有华人和马来版本的米暹。华人的版本是以米粉、辣椒酱拌炒,再加上鲜虾、切成薄片的鱼饼及切成细条的蛋饼。马来版本则是另外加入切片的熟鸡蛋与韭菜,再淋上汤汁。
ETYMOLOGY
  • The character “暹” (xiān) in this dish’s name refers to Siam, the former name of Thailand.
  • The dish is said to have originated from Thailand because of its sour, spicy and sweet taste, which is characteristic of Thai food.
  • There is another belief that it is a Malay or nyonya dish that originated from Penang, Malaysia, whose cuisine may have been influenced by the Thais.
  • Mee siam is a very popular dish among Singaporeans. The most common version in Singapore consists of rice noodles stir-fried with chilli paste, topped with sliced boiled eggs, dried tofu and Chinese chives, with a sweet and sour tamarind (asam) soup poured over it.
  • In addition, it is believed that there are differences between Chinese-style and Malay-style mee siam. The Chinese version consists of rice noodles stir-fried with chilli paste and topped with fresh prawns, sliced fish cake and strips of omelette. The Malay version is topped with sliced boiled eggs and Chinese chives, before soup is poured over it.
