由来
  • 有一种说法认为杂菜是由佛寺素菜“罗汉斋”演变而来。
  • 一部分佛教徒和道教徒都有吃斋菜的习惯,所以都会用斋料来供佛、神明及祖先,而在祭祀过后就把这些斋料聚在一起烹煮成“焖大斋”。
  • 这道素菜的做法后来流传到街市,摊贩改变了材料的配置,也将这道菜的名称世俗化,改成了“杂菜”。
  • 如今,杂菜是一些家庭在农历新年期间的必备年菜之一,有“金玉满堂”的寓意。
  • 在新加坡,各个籍贯或族群的杂菜具有不同的特色。
  • 福建、海南及娘惹式的杂菜以焖法为主,食材包括香菇、金针菇、豆腐泡、包菜、木耳、冬粉等。
  • 广东式的杂菜则是以炒法为主,除了多种颜色的蔬菜,还会加入肉类。
ETYMOLOGY
  • One belief is that chap chye evolved from the vegetarian dish “罗汉斋” (“Buddha’s Delight”) in Buddhist temples.
  • As some Buddhists and Taoists are vegetarians, they use vegetarian ingredients as offerings to Buddha, ancestors and deities. These ingredients are later cooked together in a “焖大斋” (“large vegetarian stew”) for consumption.
  • This vegetarian dish eventually became popular among the general public too. The ingredients evolved, and the dish came to be known as chap chye, a secular name.
  • Today, chap chye is one of the must-have dishes for some families during Lunar New Year. The dish signifies prosperity.
  • In Singapore, the different dialect and ethnic groups have their own unique way of preparing chap chye.
  • The Hokkien, Hainanese and nyonya chap chye is mainly stewed, with ingredients such as shiitake mushrooms, enoki mushrooms, puffed tofu, cabbage, wood ear mushrooms and glass noodles.
  • The Cantonese chap chye is mainly stir-fried. In addition to vegetables of various colours, meat is also added to the dish.
