A traditional dish in which a variety of vegetables and meat are stewed or stir-fried together.

由来
  • 有一种说法认为,杂菜是由佛寺素菜 “罗汉斋” 演变而来。
  • 一部分佛教徒和道教徒都有吃斋菜的习惯,所以都会用斋料来供佛、祖先和神明,而在祭祀完之后就把这些斋料聚在一起烹煮成 “焖大斋”。
  • 这道素菜的做法后来普遍流传到街市,摊贩将材料的配置进一步变化,也将这道菜的名称世俗化,改成了 “杂菜”。
  • 如今,杂菜是一些家庭在农历新年时期的必备年菜之一,有 “金玉满堂” 的寓意。
  • 在新加坡,各个籍贯或族群的杂菜具有不同的特色。
  • 福建、海南和娘惹式的杂菜以焖法为主,食材包括香菇、金针菇、豆腐泡、包菜、木耳和冬粉等。
  • 广东式的杂菜则是以炒法为主,除了多种颜色的蔬菜,还会加入肉类。
ETYMOLOGY
  • One belief is that chap chye evolved from the vegetarian dish 罗汉斋” (Buddha’s Delight) in Buddhist temples.
  • As some Buddhists and Taoists are vegetarian, they will use vegetarian ingredients as offerings to Buddha, ancestors, and deities. After worshipping, these ingredients are cooked together in a 焖大斋” (large vegetarian stew).
  • This vegetarian dish was popularised and made its way to the common people. Stall vendors made further changes to the ingredients and secularised the name of this dish to chap chye.
  • Today, chap chye is one of the must-have dishes for some families during Lunar New Year. The dish signifies prosperity.
  • In Singapore, the chap chye prepared by different dialect or ethnic groups have their own unique characteristics.
  • The Hokkien, Hainanese, and Nyonya chap chye are mainly stewed, and the ingredients include shiitake mushrooms, enoki mushrooms, puffed tofu, cabbage, edible fungus, and glass noodles.
  • The Cantonese chap chye is mainly stir-fried. In addition to vegetables of various colours, meat is also added to the dish.
