• The Mandarin term “清汤” comes from the Hokkien term cheng tng.
• Cheng tng is sold in most hawker centres in Singapore.
• The ingredients used to prepare cheng tng are not fixed. The main ones include dried longan, barley, gingko nuts, snow fungus, red dates, agar-agar strips, malva nut, lotus seeds, dried winter melon strips, and dried persimmon slices.
• Malva nut (Sterculia lychnophora; 胖大海) is a Chinese herb with cooling and anti-inflammatory properties. 
• In Mainland China, the term “清汤” has a distinct meaning: it refers to a clear soup with no solid ingredients, and does not refer to a type of dessert.

The elderly couple in their seventies have been running this dessert stall for over 50 years. They insist on maintaining their prices, selling red bean soup, green bean soup, cheng tng, and black glutinous rice for just S$1 a bowl.
