  • 清汤是一种具有清热解暑功能的甜品,在新加坡大部分的熟食中心内都有售卖。
  • 烹煮清汤的材料不固定,主要的材料包括龙眼干、薏米、白果、银耳、红枣、菜燕丝、胖大海、莲子、冬瓜条、柿饼片等等。
  • 胖大海(Sterculia Lychnophora)是一种具有清热消炎功效的中药,一般在烹煮传统的清汤时都会加入。
  • 清汤一词在中国大陆是指没有加菜或料的汤,而不是一种甜品。
ETYMOLOGY
  • The Mandarin term “清汤” is a paraphrase of the Hokkien or Teochew term cheng tng.
  • Cheng tng is a dessert that has cooling properties and is sold in most hawker centres in Singapore.
  • The ingredients used to prepare cheng tng are not fixed. The main ingredients include dried longan, barley, gingko nuts, snow fungus, red dates, agar agar strips, malva nut, lotus seeds, dried wintermelon strips, and persimmon slices.
  • Malva nut (sterculia lychnophora) is a Chinese herb with cooling and anti-inflammatory properties and is usually added to the preparation of traditional cheng tng.
  • The term “清汤” is used in Mainland China to refer to a soup with no added vegetables or ingredients, rather than a dessert.
