DEFINITION

Noun

A dessert made with shaved ice and ingredients such as red beans, attap seeds, and coloured syrup.

ETYMOLOGY
  • The Mandarin term “红豆冰” is a paraphrase of the Malay term ais kacang.  In the Malay language, ais refers to ice and kacang refers to beans in general.
  • It is believed that ice kachang originated from “冰球” in the 1950s till 1960s. At that time, cold drinks vendors made shaved ice into the shape of a ball and poured coloured syrup on it to form a unique dessert. Over time, with changes in ingredients, 冰球” evolved into todays ice kachang.
  • In addition to the shaved ice that is piled up like a hill, the other ingredients include red beans, jelly, coloured syrup (mainly red and green), condensed milk, fruit jelly, sweet corn, and attap seeds.
  • In this era of innovation, there is stiff competition in the food industry. Many merchants and stall holders improvise the ice kachang recipes by adding unique ingredients such as assorted fruits, chocolate, and durian flesh to attract customers seeking novelty.
