一种外皮酥脆,内里包着麦芽糖和芝麻馅料的福建传统糕饼。也称香饼。

A traditional Hokkien pastry with a crispy crust, containing maltose and sesame filling. Also known in Mandarin as 香饼.

由来
  • 福建人把麦芽糖和芝麻馅包入皮中,擀(gǎn)平成薄片,再放入烤箱,麦芽糖煮滚后,整个碰饼就会膨胀起来,但由于馅料都裹在饼皮上,所以内部就形成空心球状。由于“膨”的福建话读音是pong,而华语的“碰在受到方言读音的影响下也可能误念成pong,因此也写成“碰饼”。
  • 鉴于烤过的碰饼口感酥脆又香甜,且会散发出一种香味,因而也被称为“香饼”。
  • 由于吃了碰饼有饱实感,新加坡早期的咖啡店一般皆有售卖,作为充饥小吃
  • 19501970年代间,由于碰饼制作业竞争激烈,很多饼家开始进行改良,把碰饼的传统酥皮改成西式的油酥皮,增加碰饼外皮的酥脆口感。
  • 制作好吃的碰饼关键在于麦芽糖浆。糖浆要煮得适度浓稠,碰饼就不会硬邦邦,如此一来戴假牙的年长者也可以享用。
ETYMOLOGY
  • The Hokkiens wrap maltose and sesame filling in dough, roll it into thin slices, then bake it in an oven. The dough expands as the maltose filling reaches boiling point, however as the filling is wrapped around the dough, a hollow space is formed within the pastry. As ” (expand) is pronounced as pong in Hokkien, and the Chinese character “” (pèng) is also often mispronounced as pong in Mandarin due to the influence of Hokkien. Hence, the pastry’s name is written as “碰饼 in Chinese.
  • As the baked pong piah is crispy, sweet, and fragrant, it is also known as 香饼”, which is made up of the words “(fragrant) and “” (pastry).
  • As pong piah is a high satiety pastry, coffee shops generally sell it as a snack to relieve hunger in the early days.
  • Due to intense competition from the 1950s to 1970s, many bakeries improvised their pong piah recipes by changing the traditional crispy crust to a Western-style buttery crust, to increase its crispiness.
  • The key to a delicious pong piah is its maltose syrup, which must be heated to the right viscosity so that the pong piah will not be hard. This allows even seniors with dentures to enjoy the pastry.
