A pickled appetiser commonly found in Nyonya, Malay, and Indian cuisine. Also known in Mandarin as 阿渣.

由来
  • 源自波斯语,随后传入印度各语。后来,由印地语 achar 传入葡萄牙语,又传入英语及马来语。华语 “亚喳” 是 achar 的音译。
  • 早在 1563 年,葡萄牙人就记载印度有这种食品。
  • 亚喳的一般做法是把青瓜、萝卜、菜花、包菜等生菜切成块或条,然后加入辣椒、花生碎来腌制。有一种做法是用叁峇酱来做调配。
ETYMOLOGY
  • The term achar” originated from Persian and was subsequently introduced into the languages in India. The Hindi term achar was later introduced into Portuguese, then into English and Malay. The Chinese term 亚喳” is a transliteration of the term achar.
  • From as early as 1563, the Portuguese had recorded this dish in India.
  • Achar is usually made by slicing cucumber, radish, cauliflower, cabbage and other raw vegetables into pieces or strips. Chillis and crushed peanuts are then added into the vegetables before pickling. One method of making achar is to use sambal chilli.
