A type of gourd with flesh that is similar to that of shredded sharks fin. Also known in Mandarin as 意大利粉瓜.

由来
  • 鱼翅瓜是葫芦科植物,跟市面上常见的丝瓜、苦瓜、南瓜、冬瓜是同科,都属于低热无脂高纤瓜果。
  • 鱼翅瓜的外形长得像西瓜,营养价值高,含有大量的维他命 B、维他命 C和矿物质,而且由于具有低脂高纤的特质,因此能有效地促进新陈代谢。
  • 将鱼翅瓜的瓜肉在水中煮约 15 分钟后,再用手轻轻一捏,瓜肉就成了类似鱼翅的丝状,鱼翅瓜由此得名。同样的,也有人由瓜肉的丝状联想到意大利面,因此鱼翅瓜也可称为意大利粉瓜。
  • 鱼翅瓜原产于中国大陆,大约于 1996 年进入新加坡的市场。如今新加坡的鱼翅瓜主要从马来西亚金马伦高原(Cameron Highlands)进口。
  • 烹饪鱼翅瓜的方法有很多,最容易的是做成素鱼翅。鱼翅瓜也能做成鱼翅瓜汤、鱼翅瓜盅,配海蜇做成凉拌拼盘、或配雪耳做成糖水,鱼翅瓜糕等甜品。
ETYMOLOGY
  • The figleaf gourd is a member of the gourd family, which also includes sponge gourd, bitter gourd, pumpkin, and winter melon, all of which are often sold at markets. They are low-calorie, fat-free, and high-fibre vegetables.
  • The figleaf gourd looks like a watermelon and is highly nutritious, rich in vitamin B, vitamin C and minerals. As it is low in fat and high in fibre, it effectively improves metabolism.
  • After the flesh of figleaf gourd is boiled in water for about 15 minutes and gently squeezed by hand, its shape becomes similar to shredded sharks fin, hence its Chinese name “鱼翅瓜”, which is made up of the words “鱼翅” (shark’s fin) and “” (gourd). Similarly, some people associate the figleaf gourd filaments with spaghetti and call it 意大利粉瓜”, which is made up of the words “意大利粉” (spaghetti) and “” (gourd).
  • The figleaf gourd originated from Mainland China and was introduced to the Singapore market around 1996. Today, figleaf gourds are imported to Singapore mainly from Cameron Highlands in Malaysia.
  • The figleaf gourd can be made into many dishes, with the simplest being vegetarian sharks fin. Other dishes include figleaf gourd soup or stew, as part of a cold platter with jellyfish, and desserts such as figleaf gourd with snow fungus and figleaf gourd cake.
