A type of gourd whose flesh resembles shredded shark’s fin. Also known in Mandarin as “意大利粉瓜”.

由来
  • 鱼翅瓜是葫芦科植物，跟丝瓜、苦瓜、南瓜及冬瓜是同科，都属于低热无脂高纤瓜果。
  • 鱼翅瓜原产于中国大陆，大约于1996年进入新加坡的市场。如今新加坡的鱼翅瓜主要从马来西亚金马伦高原 (Cameron Highlands) 进口。
  • 鱼翅瓜含有大量的维他命B、维他命C及矿物质，营养价值高。由于它具有低脂高纤的特质，因此据说也能有效地促进新陈代谢。
  • 鱼翅瓜的外形像西瓜。将鱼翅瓜的瓜肉在水中煮约15分钟后，再用手轻轻一捏，瓜肉就成了像鱼翅的丝状，鱼翅瓜由此得名。
  • 此外，也有人从瓜肉的丝状联想到意大利面，因此鱼翅瓜也称为“意大利粉瓜”。
  • 烹煮鱼翅瓜的方法有很多，最容易的是做成素鱼翅。鱼翅瓜也能做成鱼翅瓜汤和鱼翅瓜盅，也可以配海蜇做成凉拌拼盘，或配雪耳做成糖水、鱼翅瓜糕等甜品。
ETYMOLOGY
  • The figleaf gourd is a member of the gourd family, which also includes the sponge gourd, bitter gourd, pumpkin, and winter melon, all of which are low-calorie, fat-free, high-fibre vegetables.
  • The figleaf gourd originated from Mainland China and was introduced to the Singapore market around 1996. Today, they are imported mainly from Cameron Highlands in Malaysia.
  • The figleaf gourd is highly nutritious, rich in vitamin B, vitamin C and minerals. As it is low in fat and high in fibre, it is said to improve metabolism.
  • The exterior of the figleaf gourd resembles a watermelon. Its flesh is white, and when boiled for about 15 minutes and gently squeezed by hand, resembles shredded shark’s fin, hence its Chinese name “鱼翅瓜”, which is made up of the words “鱼翅” (“shark’s fin”) and “瓜” (“gourd”).
  • Others associate the figleaf gourd’s filaments with spaghetti and call it “意大利粉瓜”, which is made up of the words “意大利粉” (“spaghetti”) and “瓜” (“gourd”).
  • The figleaf gourd can be made into many dishes, with the simplest being vegetarian shark’s fin. Other dishes include figleaf gourd soup or stew, as part of a cold platter with jellyfish, and desserts such as figleaf gourd with snow fungus and figleaf gourd cake.
