  • 有说法认为印度蒸米粉源自于印度南部。印度蒸米粉的英文名称为 “putu mayam”。
  • 印度蒸米粉的做法是将粘米粉面糊塞入特定的模具,然后再将面糊挤压到盖上了白布的竹箩上,形成一条条的细米粉,并将它们压平后放入蒸笼蒸熟。
  • 除了搭配红糖、椰糖或椰丝,印度蒸米粉也可蘸咖喱或其他印度特色酱料食用。
  • 本地早期的印度蒸米粉是搭配切成小块的椰糖食用,但如今一般佐以粗粒的白砂糖或红糖食用。白砂糖或红糖也经常被染成鲜亮的橙色。
ETYMOLOGY
  • Putu mayam is believed to have originated from southern India.
  • It is made by pressing rice flour batter through a mould to form long thin strands on a bamboo basket covered with white cloth. The baskets are then stacked and placed in a steamer.
  • Apart from the usual accompaniments of brown sugar, palm sugar and coconut, putu mayam can also be eaten with curry or chutneys.
  • In the early days, putu mayam was eaten with small chunks of palm sugar, but nowadays this has mostly been replaced by granulated white sugar or brown sugar that has been coloured bright orange.
