释义

名词

以高汤、鲜虾、苏东、五花肉等食材,混合黄面和米粉炒制而成的面食。简称 “福建面”,也称 “炒福建虾面”。

DEFINITION

Noun

A dish of yellow noodles and rice vermicelli stir-fried with prawns, squid and pork belly in a rich stock. Abbreviated as “福建面” and also known as “炒福建虾面”.

ETYMOLOGY
  • It is believed that Hokkien prawn mee was created by a hawker who came to Singapore from Fujian province in China at the end of the19th century.
  • As this hawker first set up shop at Rochor Road, the dish was initially known as “Rochor fried noodle”. Subsequently, the hawker handed over his recipe to his stall assistant, who in turn handed it over to four Teochew friends. Hence, the dish also came to be known as “潮州福建炒虾面” (literally, “Teochew Hokkien prawn noodle”).
  • In Singapore, Hokkien prawn mee is usually served with sambal chilli sauce and a fresh lime.
  • In Southeast Asia, the term “福建面” can refer to a variety of different dishes. For example, in Penang, it is a soup-based noodle dish.
