ETYMOLOGY
  • The Mandarin term “隆东” is a transliteration of the Indonesian term lontong, which originally means “rice cake”.
  • Carrots, cabbage, long beans and tofu are usually added to rich lontong gravy, which is seasoned with curry powder, spices, lemongrass and coconut milk. The rich gravy and ingredients are poured over rice cakes, and served with a hard-boiled egg, some fried grated coconut and a dash of sambal chilli.
  • Lontong rice cakes are made by wrapping white rice into a cylindrical or log shape, and securing it tightly before cooking it in boiling water. Malay rice cakes (otherwise known as ketupat) are similar to lontong. Both originated from Indonesia, and are a staple food eaten with lontong gravy. Unlike lontong rice cakes, ketupat are made by encasing the white rice in young coconut leaves, which are weaved into a diamond shape. These are then cooked in boiling water.
