  • 南洋群岛的气候和土地最适宜咖啡的生长。所谓的南洋咖啡据说是由南美洲传播到南洋群岛种植。
  • 南洋咖啡的咖啡豆在处理方式上与常见的咖啡烘焙大不同。一般咖啡豆通常是以滚桶式的烘焙机烘熟,但南洋咖啡豆则是以大锅拌炒,同时会加入牛油、糖等材料一起拌炒。炒好的南洋咖啡豆会结成一大块,敲碎了之后才能磨成粉。
  • 在新加坡,咖啡商一般将南洋咖啡称为 “糖枳”(在福建话中指加糖的咖啡豆),而普通的咖啡则称为 “干枳”(在福建话中指干咖啡籽)。
ETYMOLOGY
  • The climate and soil of Nanyang (literarlly Southern Seas) are most suitable for the growth of coffee. The cultivation of Nanyang coffee is said to have spread from South America to the Malay Archipelago. 
  • Nanyang coffee beans are processed very differently from the usual coffee roasts. Coffee beans are normally roasted in a drum-shaped roaster, but Nanyang coffee beans are stir-fried in a large wok with the addition of ingredients such as butter and sugar. The fried Nanyang coffee beans would form a large chunk, that would be broken into pieces then ground into powder.
  • In Singapore, coffee merchants generally refer to Nanyang coffee as “糖枳” (which means coffee beans with sugar added in Hokkien), while the usual coffee is referred to as “干枳” (which means dry coffee beans in Hokkien).
