ETYMOLOGY
  • This dish is also known in Mandarin as “参峇蕹菜”, which is a combination of the transliteration and paraphrase of the Malay term sambal kangkong.
  • In Malay food culture, sambal is a representative and unique chilli paste, while kangkong (water spinach) is one of the more popular vegetables in Southeast Asia.  When the two local ingredients are cooked together, a distinctive local dish is created.
  • One belief is that stir-frying kangkong with sambal chili paste can accentuate the aroma of the two ingredients.
  • Sambal kangkong is sold in local Chinese restaurants, Malay restaurants, zi char stalls and hawker centres.
